Se define como una enfermedad sistémica, crónica, inflamatoria y recurrente, no exclusiva de los países económicamente desarrollados, caracterizada por una acumulación anormal o excesiva de grasa corporal con riesgo de complicaciones a nivel sistémico. Se ha sugerido que la obesidad es un proceso de programación multifactorial, dado por un desequilibrio energético ocasionado por una alta ingesta de energía y un bajo gasto influenciado por cuestiones genéticas, alimentarias y ambientales.
